Sossi with Sukumawiki (or Cabbage)

INGREDIENTS

  • Sossi 80g
  • 1 medium onion chopped
  • 2 medium tomatoes chopped
  • 2 bunches sukumawiki sliced
  • 3 tablespoons cooking oil
  • Salt to taste
  • METHOD

    1. Soak 80g Sossi in a medium size cup of cold water (180ml) until all the water has been absorbed by the chunks (10 mins).
    2. In a sufuria, add the chopped onion and fry gently until tender (2 mins)
    3. Add the Sossi chunks, chopped tomato and salt to taste and fry whilst stirring adding 100ml water (5 mins)
    4. Add sukumawiki and mix it well
    5. Cook on high heat for (5 mins) to maintain crunchiness
