Sossi Pilau

Sossi Pilau is a rice dish whose recipe usually involves cooking in stock or broth, adding spices, and other ingredients such as sossi soya. It is so easy to make and a great recipe for adding a powerful flavour to your rice. Pilau is a traditional, beautiful fragrant rice dish made with many aromatic spices and soya that adds an amazing depth of flavor to the rice.

INGREDIENTS

  • - Sossi 90g
  • - 500g rice
  • - 1 large onion – chopped
  • - 4 cloves garlic- crushed
  • - 1 ginger – crushed
  • - 50g tomato paste
  • - 1 tablespoon pilau masala
  • - Salt
  • - 50 ml cooking oil
  • METHOD

    1. Soak 90g Sossi in a medium size cup (200 ml) of cold water until all the water has been absorbed by the chunks (10 mins)
    2. Put oil and onions in a sufuria to cook until golden brown (4 mins). Add garlic and ginge. Allow to cook (1 min)
    3. Add Sossi, season with salt and allow to fry on low heat (2 mins)
    4. Now add pilau masala and tomato paste. Mix well (2 mins) then add stock or water to cook rice – 1 litre of water (5 mins)
    5. Add rice to boiling water and leave to boil until the water is almost drained. Lower heat, cover the rice and allow to steam until ready (25 mins)
    6. NB: Do not stir rice as it causes sticking
